 It's the little things.
Cilantro stuffed chicken over a bed of greens.
I've included the recipe and a simple picture tutorial after the jump.

Start with the thick end of a full chicken breast and cut into a circle shape.
(You will need to use the thick end in order to do the next step.)
"Butterfly" the chicken and fill with stuffing mixture.
( I used cilantro, garlic and shrimp in mine, but you can really try all different types of flavor combinations.)
Place breast in baking ring and close.
Bake for about 40 minutes and add sauce of your choice on top.
Place on top of bed of greens, and serve!
